THE BIG BREKKIE


THE BIG BREKKIE
What you will need:
2 Rashers of bacon
2 Eggs (poached)
1 Tomato (halved)
1 Handfull of mushrooms
2 Hash Browns
Bread of choice (Turkish or Chibatta goes really well)
Hollandaise Sauce:
50g butter
1 TBS lemon juice
2 Egg yolks
1/4 Cup cream
1/2 tsp dry mustard
1/4 tsp salt
Instructions:
In a large pan fry bacon, tomato, mushrooms & hash browns
Poach eggs in a seperate pan
lightly grill bread under the grill till golden brown
Make Hollandaise Sauce as follows:
Melt butter in a double boiler
Add lemon juice, egg yolks and cream
Cook stirring constantly, until thick and smooth
Do not boil or sauce will curdle. Remove from heat
Add mustard and salt and beat until smooth
makes 3/4 cup
Place Bread on a plate with egg on top and add everything else around it... Pour over hollandaise sauce and ENJOY!
