Totally Summery Eton Mess Cake
INGREDIENTS:
For the cake:
Makes 3x15cm (6in) layers - Serves 8240ml | | 8.1fl oz | 1 cup whipping cream
2 large eggs, lightly beaten
1 tsp vanilla paste (or extract)
225g | 8oz | 1 cup caster sugar
230g | 8.1oz | 1 1/2 cups plain (all purpose) flour
1 tbsp cornflour (cornstarch)
2 tsp baking powder
¼ tsp salt
a little butter for greasing the tins

CHOCOLATE SWEET POTATO PIE WITH STRAWBERRY GELEE (GRAIN-FREE)
MINI EGG AND CHEESE TORTILLA CUPS
INGREDIENTS :
4 eggs
¼ cup sour cream (or milk, or heavy cream)
½ cup shredded cheese (you can use any type, I used cheddar and mozzarella)
diced veggies (I used a mixture of bell peppers and onions)
1 extra large tortilla or 4 small
salt and pepper to taste

Chipotle Twice Baked Sweet Potatoes
ingredients:
4 sweet potatoes (pick ones that are a good shape for twice baked potatoes)
1 lime, juiced
2 cloves garlic, minced
1 tsp cumin
1 tsp chipotle chili powder (or regular if you can't find chipotle)
1 whole chipotle in adobo , minced
2 cups spinach
1/2 cup chopped cilantro
2 cups shredded mozzarella cheese

Gluten Free Graham
Ingredients:
1/3 cup rice flour
1/4 cup + 1 Tablespoon sorghum flour
1/4 cup tapioca flour
1/4 cup corn starch (or potato starch if corn-free)
1/4 cup flax seed meal (or 2 additional Tablespoons unsalted butter)
1/8 cup (2 Tablespoons) gluten free oats, ground or flour (Use more sorghum if you're oat intolerant.)

vanilla peach, mango, and strawberry sangria
Tropical Fruit Salad
Ingredients:
1 cup of cleaned and peeled Muskmelon cubes
1 cup of cleaned and peeled Watermelon cubes
1 cup of cleaned and peeled Papaya cubes
1 cup of cleaned and peeled Pineapple cubes
1 cup of cleaned and peeled Honeydew Melon cubes
1 cup of cleaned and peeled Mango cubes
1 tablespoon of finely chopped fresh Mint leaves
Juice of a fresh Lemon
2 tablespoon of Sugar ( You can reduce it to 1 tablespoon if you want your salad to be less sweet)
1/2 cup of water

TROPICAL PINEAPPLE MARGARITA SLUSHIES
Ingredients
- 4 cups frozen diced pineapple
- Juice from 2 limes
- 1/4 cup orange juice concentrate
- 1/2 cup coconut sugar (or brown sugar)
- 1-1/2 cups tequila
- 3/4 cup triple sec
- 1 cup ice cubes
Instructions
- Place all ingredients in a high-speed blender and blend on high speed until mixture is smooth and slushy. Serve margarita slushies in a salt-rimmed glass immediately, OR place in freezer until ready to serve.
